Chicken thighs provide a leaner option while pork shoulder is more affordable.

Avocado oil has a higher smoke point, while vegetable oil is often less expensive.
Pick a piece of pork belly with the skin on that fits in your air fryer basket.
Use paper towels to pat the pork belly all over until it is really dry.
Cut the meat side of the pork belly into straight lines, then cut again at an angle to form a crisscross pattern.
Flip the pork belly so the skin is facing up and poke holes all over the skin with a skewer or sharp knife, being careful not to go too deep.
Flip the pork belly over again and sprinkle 1/4 teaspoon of salt on the meat side.
Sprinkle 1/2 teaspoon of paprika seasoning, 1/2 teaspoon of pork belly rub or your favorite spice mix, and a bit of black pepper on the meat.
Drizzle some olive oil on top and rub the seasoning into the cuts in the meat.
Take aluminum foil and use at least two layers, rubbing a bit of olive oil on the foil to prevent sticking.
Place the pork belly on the foil skin side up and brush the skin with white vinegar.
Cover the entire skin with a layer of salt to draw out moisture and make it crispier.
Fold up the sides of the aluminum foil around the pork belly to hold it in place and catch juices while cooking.
Carefully lift the foil and place the pork belly in the air fryer basket.
Set the air fryer to 250°F (125°C) and air fry the pork belly for 30 minutes.
After 30 minutes, remove the air fryer basket and carefully remove the hardened layer of salt from the top of the pork belly.
Use a knife or brush to scrape off any remaining salt on the pork skin.
Wipe the aluminum foil to remove any salty fat that may have gathered.
Place the pork belly back on the foil and drizzle a little olive oil over the top, spreading it evenly across the skin.
Put the pork belly back in the air fryer and set it to 400°F (200°C) and air fry for another 30 minutes.
After 30 minutes, the pork belly is ready with golden brown, puffed up, and crispy skin.
