1 1/2 cups espresso or strong coffee, room temperature
6 Tbsp golden rum, divided
40 ladyfinger cookies
6 large egg yolks
3/4 cup sugar
16 oz mascarpone, cold
2 cups heavy whipping cream
2-3 Tbsp unsweetened cocoa powder

mascarpone cheese

🥗Healthier: Greek yogurt

💰Cheaper: cream cheese

Greek yogurt is lower in fat and calories, while cream cheese is often more affordable.

ladyfingers

🥗Healthier: whole grain ladyfingers

💰Cheaper: sponge cake

Whole grain options are more nutritious, and sponge cake can be a budget-friendly substitute.

1

In a bowl, stir together 1 1/2 cups espresso and 3 Tbsp rum. Quickly dip half of the ladyfingers, one at a time, and then arrange them in a single layer in the bottom of a 9x13 casserole dish.

2

In a separate medium glass bowl, whisk together egg yolks and sugar. Place over steam and whisk for 10 minutes until lighter in color and slightly thickened. Remove from heat and cool.

3

In another bowl, beat together mascarpone and 3 Tbsp rum. Mix in the warm yolk mixture until well incorporated.

4

In a chilled bowl, beat heavy whipping cream until stiff peaks form. Gently fold half into the mascarpone mixture, then blend in the remaining whipped cream.

5

Spread half of the cream over the first layer of ladyfingers. Dip and arrange the remaining ladyfingers on top, and then spread the remaining cream on top. Cover with foil and refrigerate for 8 hours or overnight. Dust with cocoa powder before serving.
