Mango Rice

200 gm boiled rice
100 gm grated raw mango
15 to 18 curry leaves
2 green chillies (slit)
2 to 3 dry red chillies
50 gm roasted peanuts
1.5 tbsp split black gram (urad dal)
1 tbsp Bengal gram (chana dal)
1/4 tsp asafoetida (hing)
1 tsp mustard seeds
3 to 4 tbsp cooking oil
1/3 tsp turmeric powder
1.5 tsp salt or as per taste

Boil the rice and set aside to cool.

Grate the raw mango and keep it ready.

In a pan, heat the cooking oil over medium heat.

Add mustard seeds and let them splutter.

Add split black gram (urad dal) and Bengal gram (chana dal) and sauté until golden brown.

Add the dry red chillies, green chillies, curry leaves, and asafoetida (hing). Sauté for a few seconds until fragrant.

Stir in the turmeric powder and salt.

Add the boiled rice and grated raw mango to the pan, mixing well to combine all ingredients evenly.

Finally, add roasted peanuts and mix again. Cook for a few minutes to heat through.
