2 ripe mangoes, diced

Rinse the jasmine rice under cold water until the water runs clear.

In a pot, combine the rinsed rice, 2 cups of water, and 1/4 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and water is absorbed.

In a separate saucepan, combine the coconut milk and sugar. Heat over medium heat until the sugar dissolves, but do not boil.

Once the rice is cooked, remove it from heat and let it sit covered for 5 minutes.

Fluff the rice with a fork and then pour the coconut milk mixture over the rice. Stir gently to combine.

Add the diced mangoes to the rice and mix carefully to avoid mashing the mangoes.

Let the mixture sit for about 10 minutes to allow the flavors to meld.
