1 cup basmati rice cooked and cooled
1 Raw mango, peeled and grated (~3/4 cup)
2-3 tablespoon oil
2 tbsp raw peanuts
1/2 teaspoon mustard seeds
1 teaspoon chana dal (split Bengal gram)
1 teaspoon urad dal (split black gram)
1-2 green chilies, finely chopped
1/4 teaspoon turmeric powder
1 sprig curry leaves
1/2 inch ginger chopped
Salt to taste
Fresh coriander leaves for garnish

Heat oil in a pan and add mustard seeds, allowing them to splutter.

Add chana dal, urad dal, and peanuts, and sauté until golden brown.

Add chopped green chilies, ginger, and curry leaves, and sauté for a minute.

Stir in the grated raw mango and turmeric powder, cooking for a couple of minutes.

Add the cooked and cooled basmati rice, mixing well to combine all ingredients.

Season with salt to taste and garnish with fresh coriander leaves before serving.
