Prepare the dough by mixing flour and salt in a bowl.
Add eggs and water to the flour mixture and mix well.
Knead the dough until smooth, then add a little olive oil.
Let the dough rest for 3 hours or longer for better texture.
Roll out the rested dough and cut it into noodle shapes.
Pull the noodles to elongate them for easier eating.
Boil water in a pot and add the noodles, cooking them on medium heat.
Once the noodles float, cook for an additional 30 seconds, then remove from heat.
Rinse the noodles with lukewarm water to stop the cooking process and prevent them from becoming dry.
Prepare the sauce by mixing garlic, coriander leaves, chicken broth, chili, peanut butter, sesame seeds, sesame oil, vinegar, and soy sauce in a bowl.
Add the cooked noodles to the sauce and mix well.
Boil bok choy in the same water used for the noodles.
Serve the noodles with an egg on top and enjoy.
