Go to the market and buy a whole chicken and chicken thighs.
Spatchcock the chicken by cutting along each side of the backbone with kitchen scissors.
Remove the backbone and save it for making broth.
Flip the chicken over and break the breastbone to help it cook evenly.
Marinate the chicken with a splash of olive oil and lemon juice, and place it in the fridge.
Marinate the chicken thighs with olive oil, lemon juice, and Mediterranean seasoning mix.
Prepare a charcoal grill and light it, allowing it to heat for about 30 minutes.
Prepare skewers with marinated chicken, capsicum, onion, and halloumi cheese.
Place the skewers in a basket for the rotisserie and secure them tightly.
Insert a thermometer into the chicken and monitor the cooking process via Bluetooth.
Cook the skewers and chicken until they are cooked through and have a nice char, checking for doneness regularly.
Prepare a sauce with grated cucumber, Greek yogurt, garlic, lemon, and salt to serve with the chicken.
Serve the chicken and skewers hot with the sauce.
