Vanilla Skyr Dessert

Originating from Iceland, skyr is a traditional dairy product that has been enjoyed for centuries. This dessert showcases the creamy texture and tangy flavor of skyr, often sweetened and layered with fresh fruits and granola. Today, skyr has gained popularity worldwide, often celebrated for its high protein content and versatility in both sweet and savory dishes.
Heat 1 liter of milk to 38 degrees Celsius (100 degrees Fahrenheit).
In a large bowl, mix 200 grams of sour cream with a little bit of milk.
Add the entire heated milk to the sour cream mixture and stir.
Mix 3 to 4 drops of rennet with a little water and add it to the milk mixture, stirring well.
Let the mixture sit in a warm, draft-free place for 10 to 12 hours.
After 10 to 12 hours, strain the mixture using a sieve and cheesecloth.
Hang the cheesecloth to drain for 2 hours.
Optionally, add a little sugar for sweetness and serve with blueberries, honey, coconut flakes, chocolate, or other fruits.
