In a pan, mix 1 cup grated coconut and 1/2 cup jaggery over medium-low heat until combined.

Add 1 tablespoon white oil and 2 tablespoons sugar to the mixture and stir until the sugar and jaggery melt.

Add 2 tablespoons milk powder to enhance the flavor and mix well until sticky, then set aside.

In another bowl, mix 1 cup water with 3 tablespoons rice flour until smooth.

In the same pan, add 2.5 cups water, a pinch of salt, and 2 tablespoons sugar, along with 2 tablespoons jaggery, and stir well.

Add 1 tablespoon ghee and mix until slightly warm.

Once the water is boiling, add the rice flour mixture and stir until well combined and slightly thickened.

Turn off the heat and cover, letting it cool to room temperature.

Once cool, knead the dough until smooth and form into balls.

Make a hole in the center of each ball and fill with the coconut mixture, then seal the edges.

Optionally, design the pitha with patterns using a spoon.

Prepare a steamer by brushing with ghee and place the pitha inside.

Steam the pitha for 10 to 15 minutes until cooked through.
