1

In a medium mixing bowl, add the tablespoon of warm water and the yeast with a pinch of sugar. Stir and let it sit for 5 minutes to ensure yeast is activated.

2

Add the remaining ingredients to the bowl. In a food processor or an electric mixing bowl, combine dough until uniform.

3

Knead the dough for 5 minutes on a floured surface until smooth and elastic.

4

Cut the dough into three pieces and wrap with plastic film.

5

Refrigerate the pastry dough for 30 minutes, preferably 1 to 2 hours.

6

Mix the chopped walnuts and Jam together and put aside.

7

Once the pastry dough is chilled, remove from the plastic film and begin rolling each dough piece with a rolling pin to create a 12-14 inch circular dough.

8

Use a large bowl or circular baking paper to outline a perfect circle. Cut off the edges of the dough.

9

Preheat the oven to 350°F.

10

Cut the pastry dough to create 8 triangle pieces.

11

Add half to 1 tbsp of the walnut filling in the center closest to the long side of the triangle. Roll the dough tightly and tuck as you roll. Once dough is rolled halfway, pinch the sides and finish rolling. Curl the dough to a crescent shape.

12

Repeat the last few steps until all the pastry dough and filling is used.

13

Place all the rolled cookie dough onto a large baking sheet with parchment paper.

14

Brush on melted butter before inserting the tray in the oven.

15

Bake for 15-18 minutes or until golden brown.

16

Allow cookies to cool for 10 minutes before dusting with confectioners sugar.
