Start with a pot of black beans and set up your pressure cooker.
Chop 2 onions, green peppers, and a small head of garlic.
Put the pork chops into a container and add mojo to marinate them.
Sprinkle complete seasoning and cumin over the pork chops, cover, and shake to coat.
Refrigerate the marinated pork chops for later.
Add enough water to the pressure cooker to cover the black beans by two fingers.
Heat the black beans on the stove to start softening them.
Chop the vegetables and add them to a chopper; if they don't mix well, add a bit of mojo or liquid to help.
Once the black beans are soft and the water is black, add cumin, complete seasoning, bay leaves, and half a teaspoon of sugar.
Stir everything, cover, and cook on high for 20 minutes once the pressure starts.
For the rice, rinse 2 cups of rice and add 3.5 to 4 cups of water, along with salt and olive oil, then microwave for 25 minutes.
After 20 minutes of cooking the beans, turn off the heat and let it sit for 5 minutes before releasing the pressure.
Boil the pork chops in a pot with water for a few minutes to ensure they are cooked inside without drying out.
After boiling, drain the water and place the pork chops in a frying pan with olive oil to brown them.
Add sliced onions to the frying pan with the pork chops for flavor.
Flip the pork chops to achieve a nice color on both sides, and once done, turn off the heat.
