🥗Healthier: pork tenderloin

🥗Healthier: avocado oil

💰Cheaper: canola oil

Avocado oil is healthier, while canola oil is a budget-friendly option.

1

Combine fresh mint, fresh oregano, and a whole bunch of garlic in a bowl.

2

Add freshly squeezed orange juice and juice from 2 limes to the bowl.

3

Season the mixture with freshly ground black pepper, a lot of salt, cumin, smoked paprika, and a touch of cayenne.

4

Blend the marinade until relatively smooth using an immersion blender.

5

Pierce the pork shoulder all over to help the marinade penetrate the meat.

6

Transfer the pork shoulder into a reusable container and pour the marinade over it, tossing until thoroughly coated.

7

Marinate the pork in the fridge for about 24 hours, tossing occasionally.

8

Add sliced onions to a roasting pan and make space in the middle for the pork, placing it fat side up.

9

Pour any excess marinade over the onions and add about 0.5 cups of cold fresh water to the pan.

10

Sprinkle a little more salt over the top of the pork if desired.

11

Transfer the roasting pan into a preheated 300°F oven for about 5 hours or until the meat reaches an internal temperature of about 190°F.

12

Baste the pork as it roasts, repositioning it if necessary to avoid splashing grease.

13

After about 4 hours, check the pork and baste it generously before returning it to the oven for another hour or until the desired internal temperature is reached.

14

Once done, wrap the pork in foil and let it rest for one hour before serving.

15

Uncover and baste the pork again before serving, garnishing with fresh herbs if desired.
