Cover the dough and let it rest for 30 minutes.
Prepare the filling by mixing chopped dates, almonds, and cinnamon in a bowl.
Roll out the dough into a rectangle on a floured surface.
Spread the date filling evenly over the dough.
Roll the dough tightly into a log shape, sealing the edges.
Cut the log into pieces, about 2 inches long.
Heat oil in a deep pan over medium heat until hot.
Fry the pieces until golden brown on all sides, about 4-5 minutes.
Remove from oil and drain on paper towels.
In a separate pot, heat honey and water until combined.
Dip the fried pieces in the honey mixture, then roll in sesame seeds.
