10 Pork Sausages
6 Bacon Slices, cut into small squares or strips
1 tbsp Butter
1 medium Onion, diced
4 Small Carrots, peeled and chopped
2 Garlic Cloves, minced (or 2 tsp Garlic Puree)
1 tsp Smoked Paprika
400g (14oz) Canned Chopped Tomatoes
300ml Chicken Stock
2 tbsp Tomato Puree
1 tbsp Worcestershire Sauce
1 tsp Sweetener (Erythritol)
1 tsp Dried Mixed Herbs
2 Bay Leaves
3 Fresh Thyme Springs

In a large saucepan (with a lid), over low-medium heat, add the oil and sausages. Fry the sausages, turning occasionally, until they are nicely browned all over (about 15 minutes). Remove the sausages and set aside.

Add the bacon to the pan. Fry until starting to go crispy. Then remove and set aside with the sausages.

Add the butter, carrots and onions to the pan. Cook for 5 minutes, stirring occasionally, until the onion starts to soften.

Add the garlic and cook for another 2 minutes, stirring often. Then stir in the paprika and cook for a few seconds.

Add the canned tomatoes, chicken stock, tomato puree, Worcestershire sauce, sweetener, mixed herbs, bay leaves and thyme sprigs. Stir to combine.

CAREFULLY add the sausages and bacon back into the pan. Bring the sauce to a simmer. Once simmering, cover with a lid for 25-30 minutes, stirring every so often, until the sauce is at your preferred thickness.
