Prepare colorful veggies: chop red onion, red pepper, and green pepper (or any other veggies you have).

In a large oven-proof casserole dish, fry venison sausages until browned; they don't need to be fully cooked. Remove and set aside.

In the same pan, add the chopped veggies and fry for a few minutes until softened and onions start to brown.

Pour in 1 glass of red wine and reduce by about a third to remove some alcohol.

Cover the pot with a lid and place it in the oven at 180°C (approximately 356°F).

After the timer goes off, remove the lid and stir in 1 can of washed and drained cannellini beans.
