Avocado oil has a higher smoke point.
Separate the eggs, using 200-300g of bacon, cutting it into small pieces.
Heat a pan and add a little vegetable oil to prevent splattering when frying the bacon.
Fry the bacon until it shrinks and releases its fat, then remove it from the heat.
Use a cast iron skillet, and cure it by rubbing it with a paper towel and heating it until it smokes for about 5 minutes.
Once the skillet is ready, add the fried bacon and some chopped chives.
Add 1 cup of fine manioc flour to the bacon, mixing it well.
Prepare the eggs by cracking them into the skillet, using half an egg per hole.
Sprinkle salt on each egg.
Cook the eggs on low heat, allowing them to fry gently without flipping them, until the whites are set but yolks remain runny.
If desired, drizzle some of the bacon fat over the eggs while they cook.
Carefully lift the eggs out of the skillet with a spatula and place them on a serving dish.
Garnish the dish with cherry tomatoes and a sprinkle of black pepper and chives.
