Today, hummus has gained global popularity, inspiring countless variations and adaptations, often enjoyed as a healthy snack or appetizer.

Whole wheat flour offers more fiber, while all-purpose is less expensive.
Take 1/2 cup water in a bowl.
Add 1/2 teaspoon salt and 1/2 teaspoon sugar to the water.
Mix well and let it sit for 5 minutes.
In another bowl, take 1 cup all-purpose flour and 1/2 cup beans flour.
Add the water mixture to the flour and knead to form a dough.
Cover the dough with a soft cloth and let it rest for 1 hour.
Soak 1/2 cup chickpeas overnight in water.
In a pressure cooker, add the soaked chickpeas and 1/2 teaspoon baking soda with enough water.
Cook for 2 whistles and then let the pressure release naturally.
Strain the chickpeas and let them cool, reserving the cooking water.
In a pan, lightly roast the chickpeas until they turn a light brown color.
Add 1/2 cup olive oil to the roasted chickpeas and blend until smooth to make a fine paste.
Add 1 clove of garlic and the reserved cooking water as needed to achieve the desired consistency.
Add juice of 1/2 lemon and salt to taste, then blend again until mixed well.
Check the consistency and color of the hummus, it should be smooth and creamy.
For the pita bread, divide the rested dough into small balls and roll them out into flat circles.
Cook the rolled pita bread in a pan until both sides puff up and are golden brown.
Serve the hummus with the warm pita bread.
