Thin slice the beef to about 1/8 inch, paper thin.
Marinate beef with Coconut Aminos, Red Boat fish sauce, toasted sesame oil, black pepper, tapioca starch, and a little bit of baking soda. Mix well and set aside for 15 minutes.
Rinse Yu Choy and set aside to drain well. If too long, dice into sections or small rounds.
Finely chop garlic, ginger, and scallions, separating the white and green parts.
Preheat the skillet until nice and hot.
Fry the beef in avocado oil for about 1-2 minutes until golden brown, then flip to cook the other side.
Set the beef aside along with any pan juices.
In the same skillet, add more oil and quickly fry the aromatics. Season with two pinches of salt.
Add the diced Yu Choy to the skillet, toss well, and season with more salt while tossing.
Return the beef and pan juices to the skillet, tossing everything together.
Add homemade shiitake flavored oyster sauce and starch thickener, give another toss, and keep tossing until combined.
