Get a wire rack ready for smoking.

Lay out 20 Ritz crackers on the wire rack.

Slice Babybel cheese into halves, then quarter those halves.

Place the quartered Babybel cheese on top of each Ritz cracker.

Preheat the smoker to 200°F.

Put the wire rack with the crackers and cheese on the smoker.

Smoke at 200°F for about 30 minutes, watching for color change in the cheese.

After 30 minutes, check for a nice yellow color and soft texture in the cheese.

Bring the smoked crackers inside.

Add a spoonful of Holy Hascap Jelly on top of each Babybel cracker.

Drizzle each cracker with stinging hot honey.
