Ingredients

  • rice flour

  • salt
  • banana leaves
  • cardamom
  • ghee

Instructions

  1. 1Soak rice flour in water for 30 minutes until it becomes a smooth batter.
  2. 2Mix grated coconut and jaggery in a bowl until well combined.
  3. 3Add a pinch of salt and cardamom to the coconut mixture for flavor.
  4. 4Prepare banana leaves by cutting them into squares and lightly heating them to make them pliable.
  5. 5Take a small portion of the rice flour batter and spread it on a banana leaf square.
  6. 6Place a spoonful of the coconut-jaggery mixture in the center of the batter.
  7. 7Fold the banana leaf over to create a pouch, sealing the edges tightly.
  8. 8Repeat the process until all batter and filling are used up.
  9. 9Arrange the pitha in a steamer basket, ensuring they are not overcrowded.
  10. 10Steam the pitha for about 20-25 minutes until they are cooked through and firm to touch.
  11. 11Remove the pitha from the steamer and let them cool slightly before serving.
