Place the contra filé on the grill, fat side down, and cook for 5-7 minutes until browned.
Flip the meat and cook for an additional 5-7 minutes for medium-rare.
Use a meat thermometer to check for an internal temperature of 130-135°F.
Remove the meat from the grill and let it rest for 10 minutes.
While resting, sauté onions and bell peppers in butter until soft.
Add cherry tomatoes and cook until slightly blistered.
Slice the contra filé against the grain into thick slices.
Serve with sautéed vegetables and a squeeze of lime juice.
Garnish with fresh cilantro and paprika.
