Today, they are popular not only in China but also in various parts of the world, often adapted with different fillings to suit local tastes.

Harvest garlic chive from the garden, cutting it to ground level and collecting about 2 pounds.
Wash the harvested garlic chive to remove any dirt and dry it off to avoid excess water in the filling.
Measure out 2 cups of all-purpose flour and 1 teaspoon of pink salt into a bowl.
Add 2/3 cup of boiling hot water to the flour and salt mixture, and mix until combined.
Let the dough rest for 15 minutes, then knead for an additional 5 minutes.
Ball up the dough and let it rest for another 15 minutes before using it.
Prepare the filling by finely chopping the ground pork with a cleaver.
Chop the shrimp into pieces slightly larger than pea size, aiming for about 3/4 cup to 1 cup depending on preference.
In a pan, scramble 2 eggs with 2 tablespoons of extra virgin olive oil until well mixed.
Add 1 teaspoon of sugar and 1 teaspoon of sesame oil to the egg mixture and mix well.
Incorporate the chopped shrimp and ground pork into the egg mixture, followed by 1 tablespoon and a half of Maggi seasoning.
Cook a small amount of the filling in a skillet to taste for seasoning, adjusting as necessary.
Once the dough has rested, flour a board and take half of the dough to roll into a long log shape.
Slice the log into pieces for dumpling wrappers, rolling each piece out to be slightly thicker than store-bought wrappers and oblong in shape.
Fill each wrapper generously with the filling, pinching the edges to seal.
Boil the dumplings in water, stirring occasionally to prevent sticking, until cooked through.
