Preheat the Traeger Flat Rock griddle over medium heat.
Add butter or oil to the griddle surface to grease it.
Pour shredded potatoes onto the griddle and cook for a couple of minutes, tossing them around.
Flatten the potatoes into a nice rectangle shape on the griddle.
Season the hash browns with salt, pepper, and garlic seasoning.
Cook the hash browns until they are about 95% done, then add more butter for the vegetables.
Add diced onions and bell peppers to the griddle and cook for a couple of minutes.
Add thick-cut ham to the griddle to heat it up, mixing it with the vegetables.
In a bowl, whisk together 6 eggs and pour them over the hash browns in the center of the rectangle.
Spread the eggs out evenly over the potatoes.
Add cheese slices on top of the eggs, followed by the cooked vegetables and ham.
Fold the omelette in half over the filling.
Once cooked, remove the omelette from the griddle and serve hot.
