Turkey in Horseradish Sauce

Heat oil in a large skillet until hot.
Add turkey pieces to the skillet and brown on each side; do not cook through.
Remove turkey and set aside on the same plate.
Add 1 cup of diced onion to the skillet and brown.
Add roughly chopped garlic to the skillet and stir.
Add 2 bay leaves, whole peppercorns, and all spice berries to the skillet.
Return the turkey to the skillet and add 4 cups of water.
Season with salt and black pepper; cover and simmer for at least 30 minutes until tender.
In a separate bowl, melt 3 tablespoons of butter and add 3 tablespoons of flour to make a roux.
Gradually add broth from the turkey pot to the roux to avoid clumping.
Combine the roux with the turkey and broth mixture and bring to a boil.
Add 3/4 cup of heavy cream to the sauce.
Stir in 3/4 cup to 1 cup of horseradish, depending on taste.
Add a squirt of lemon juice and 1 teaspoon of sugar to the sauce.
Taste and adjust seasoning as needed.
