Pork & Green Chili Stew

1 tbsp. pumpkin seeds
1 tbsp. cilantro
3 oz. pork shoulder
½ tsp. cayenne pepper
½ oz. green chilies
1 tsp. butter
2 tbsp. red onion
2 tbsp. chicken broth
1 oz. green pepper
1 tbsp. sour cream

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté until translucent, about 5 minutes.

Stir in the minced garlic and cook for an additional minute until fragrant.

Add the pork cubes to the pot and brown on all sides, about 8-10 minutes.

Stir in the chopped green chilies, chicken broth, cumin, oregano, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat to low and cover the pot.

Simmer for 1.5 to 2 hours, or until the pork is tender and easily shredded.

Stir in the lime juice and adjust seasoning if necessary.

Serve hot, garnished with fresh cilantro.
