Tuna Melts

1 can tuna
red chili flakes
1 stick celery

Grab a can of your favorite tuna and put it in a small mixing bowl.

Use a fork to break the tuna up really fine.

Add red chili flakes to the tuna for a little kick.

Cut one stick of celery into three lengthwise and then dice it really fine.

Add the diced celery into the tuna.

Add a good squirt of mayonnaise and a dash of lemon juice to the mixture.

Mix everything together until it has a sticky consistency that doesn't fall apart when lifted out; add more mayonnaise if needed to help bind it together.

If using tomatoes, slice them up to add before pressing.

Use Turkish bread, slice it lengthwise, and drizzle with olive oil.

Scoop the tuna mixture onto one side of the bread and smooth it out with the back of a spoon for an even coating.

If using tomatoes, add them on top of the tuna and season with salt and pepper.

Add spinach leaves and grated cheddar cheese on top if desired.

Place the sandwich in a panini press and close the lid, cooking for about seven or eight minutes.

If using a frying pan, press the top down with a wide spatula to cook.
