Koshari

1/2 cup vermicelli
1/2 cup cooked macaroni
1 cup Egyptian rice, soaked
1 cup brown or whole lentils, boiled
1 teaspoon salt
1 teaspoon cumin
2 cups boiling water
3 tablespoons olive oil
4 cloves garlic, minced
1/4 teaspoon salt
1/4 teaspoon cumin
1/4 teaspoon hot red pepper flakes
1/4 teaspoon ground coriander
1 tablespoon tomato sauce
3 tablespoons white vinegar
2 cups fresh tomato juice
2 large onions, thinly sliced
2 tablespoons flour

In a wide pot, heat the vegetable oil and toast the vermicelli until golden.

Add macaroni, rice, and boiled lentils. Stir for a minute.

Add salt and cumin, then pour in the boiling water. Cover the pot.

Cook on high heat for five minutes, allowing the mixture to absorb the water.

Reduce the heat to the lowest setting and let it cook for 15 minutes until all ingredients are tender.

In another pot, add olive oil and sauté the garlic until golden.

Add salt, cumin, hot pepper flakes, and coriander. Stir for a minute.

Add tomato sauce and stir for another minute.

Pour in vinegar and tomato juice, then cover the pot.

Simmer on low heat for ten minutes until the sauce thickens.

Coat onion slices in flour by rubbing them with your hands.

Fry in hot oil until golden. Remove on a sieve to keep them crispy.

Pour a portion of the cooked rice, macaroni, and lentils into a bowl. Top with crispy fried onions and the red sauce. Serve and enjoy!
