Chop all the cheeses into small pieces and mix them with the eggs until combined.
Transfer the cheese mixture into a piping bag or resealable bag and refrigerate until ready to use.
In a large bowl, whisk together the flour and salt.
Bring water to a boil and gradually add it to the flour mixture, stirring constantly until a dough forms.
Knead the dough on a lightly floured surface until smooth and elastic, then cover and let it rest for 30 minutes.
If using a pasta machine, divide the dough into smaller pieces and roll it out to your desired thickness.
Lightly wet half of the dough sheet with water, pipe or spoon small mounds of the cheese filling onto it, then cover with the other half of the dough sheet and cut out individual ravioli.
Bring a large pot of salted water to a boil, add the ravioli, and cook for 3-4 minutes until they float to the surface.
Prepare the sauce by heating olive oil in a pan, adding minced garlic, chopped tomatoes, fresh basil, and seasoning with salt and pepper, then simmer for a few minutes.
Drain the ravioli and toss them with the tomato sauce before serving.
