Today, variations of breadfruit fritters can be found in various Caribbean and Pacific Island cuisines, celebrating its unique flavor and texture.

Remove the core from the overripe breadfruit and break it up with hands into a bowl.
Remove the skin from the breadfruit and place it in the bowl.
Chop 1 medium-sized onion finely and add to the bowl.
Add 2 chopped pimento peppers, 3 cloves of minced garlic, and a piece of scotch bonnet pepper to the bowl.
Sauté the aromatics in a bit of oil for about a minute until the onions are translucent.
Add the sautéed aromatics to the breadfruit mixture along with chopped Shadow Benny.
Season with a pinch of salt and black pepper, and mix well.
Crack 2 eggs into the mixture and incorporate them using a fork until the texture changes.
Portion the mixture into small cakes or fritters.
Heat oil in a frying pan over medium to low heat and add the fritters to the pan.
Cook for about 3-4 minutes on each side until golden brown.
If unsure they're cooked through, place them in a preheated oven at 400°F for 8-10 minutes.
