Cultural Context

Originating from Eastern European Jewish communities, bagels became a staple in New York City in the early 20th century. Traditionally boiled before baking, they symbolize a connection to Jewish heritage and are often enjoyed with cream cheese and lox. Today, bagels are beloved worldwide, with countless variations and toppings.

1

Microwave 1 and 1/3 cups of water for 1 minute to reach around 100 degrees.

2

Check the water temperature; it should be around 113 degrees.

3

Add the warm water to a mixing bowl.

4

Add 5 teaspoons of sugar and stir until mixed.

5

Add 1 tablespoon (or 1 packet) of instant yeast and whisk together.

6

Let the mixture sit for 10 minutes until foamy.

7

Add 1 tablespoon of canola oil, 3 and 1/2 cups of bread flour, and 1 and 1/2 teaspoons of salt to the yeast mixture.

8

Use a KitchenAid mixer with a dough hook to mix on the slowest speed, then increase slightly for 8 minutes until the dough is not sticky.

9

Form the dough into a ball and cut it in half, then cut each half into 4 pieces to form 8 dough balls.

10

Roll each piece into a ball and let them rise under a warm towel for 20 minutes.

11

Prepare boiling water in a pot and preheat the oven to 500 degrees Fahrenheit.

12

After 20 minutes, shape each dough ball into a bagel by pushing down the center and twirling it around your finger.

13

Boil each bagel in the water for 1 minute on each side.

14

Remove the bagels from the water and place them on a prepared baking sheet.
