Soak 1/2 cup chana dal in water for 1-2 hours.

Boil the soaked chana dal in water for 10 minutes on high flame, then reduce to medium flame and boil for another 10 minutes.

Chop 2 large potatoes into small pieces for making aloo chaat.

Marinate the chopped potatoes with 1/2 teaspoon ginger-garlic paste, 1 teaspoon chaat masala, 1/2 teaspoon red chili powder, 1 teaspoon turmeric powder, 1 teaspoon coriander powder, 1 teaspoon Kashmiri red chili powder, 1 teaspoon garam masala, and 1/2 teaspoon salt. Mix well and let it sit for 15-30 minutes.

After boiling, drain the water from the chana dal and check if it is well-cooked but not too mushy.

Add 1 tablespoon besan to the marinated potatoes and mix well until the potatoes are coated.

Heat oil in a pan and add the marinated potato mixture. Fry on medium heat for about 6-7 minutes until golden brown, ensuring not to use high flame to avoid burning.

Once cooked, sprinkle some chaat masala on the fried potatoes and set aside.

In another pan, heat oil and add 1/2 teaspoon cumin seeds, followed by the spices: 1/2 teaspoon red chili powder, 1 teaspoon turmeric powder, 1 teaspoon coriander powder, 1 teaspoon garam masala, and 1/2 teaspoon chaat masala. Mix and sauté briefly.

Add the boiled chana dal to the pan and mix well with the spices. Cook on medium heat for about 30 seconds to a minute.

Chop 1 tomato, 2 green chilies, 1 small onion, and some fresh mint and coriander leaves. Add these to the cooled chana dal mixture along with the juice of 1/2 lemon and mix well to prepare chana chaat.

Prepare fruit chaat by peeling and cutting apples and bananas into halves. Cut grapes into halves as well. Add pomegranate seeds, a little sugar, and 1/2 teaspoon chaat masala. Mix well.

Serve the prepared dishes along with colorful papads.
