Start by preparing the graham crackers and homemade marshmallows.
Melt the dark chocolate using a heat gun to temper it, ensuring it doesn't exceed 90°F to avoid breaking.
Add more chocolate drops to the melted chocolate to bring the temperature down and help with tempering.
Stir the chocolate until it thickens but still pours like a ribbon, aiming for a temperature around 72°F for setting.
To prevent chocolate blooming, keep it at the right temperature and avoid moisture exposure.
Use hot tap water in a pot (not on the stove) to melt the chocolate, checking the temperature regularly.
Once the chocolate is tempered, spread a layer of chocolate on a graham cracker, then add a layer of marshmallow, followed by another layer of chocolate on top.
Allow the assembled s'mores to set and harden before transporting.
