Algerian Date Bars, known as Makroud, are a traditional sweet treat often enjoyed during celebrations and holidays. They reflect the rich culinary heritage of Algeria, where dates are a staple ingredient due to their abundance in the region. These bars are a delightful combination of sweet dates and nutty semolina, showcasing the country's love for simple, yet flavorful desserts. Add semolina to a large mixing bowl.
Add salt, optional sugar, and optional baking powder to the semolina.
Pour in melted butter and mix until all grains of semolina are well coated.
Add warm water and orange blossom water, mixing until a soft dough forms.
Cover the dough and let it rest while preparing the filling.
Take the date paste and mix in butter, cinnamon, and orange blossom water until smooth.
Use two squares of parchment paper to roll out the date paste into a flat piece.
Roll the dough into a ball and cut it into two equal pieces.
Roll out one piece of dough to about the thickness of a finger, shaping it into a rectangle or square.
Place the rolled dough on parchment paper and lay the date paste on top.
Roll out the second piece of dough to the same size and place it on top of the date paste.
Trim any excess dough and smooth out the top with a rolling pin.
Score the dough into bars using a cookie cutter or knife for even pieces.
Preheat a skillet on low heat and cook the date bars on both sides until golden, moving them around to prevent burning.
Serve with milk or buttermilk.
