Prepare a baking sheet by buttering it or lining it with parchment paper.

In a medium heavy-bottomed pot, combine 2 cups of granulated sugar, 1/2 cup of water, and 1 cup of corn syrup.

Allow the mixture to return to a boil and watch the thermometer until it reaches 280°F, then add 2 cups of dry roasted peanuts and stir slowly but consistently.

When the mixture reaches 305°F, remove it from heat and immediately stir in 1 teaspoon of vanilla extract and 1 teaspoon of baking soda, mixing well to combine.

Quickly pour the mixture onto the prepared baking sheet and spread it into an even layer using the back of a spoon or a silicone spatula.

Sprinkle flaky salt on top if desired, then allow the brittle to cool completely for about 45 minutes.
