Preheat the oven to 325°F (165°C).
Remove the turkey giblets and pat the turkey dry with paper towels.
Rub the turkey all over with olive oil, then season generously with salt and black pepper.
Stuff the cavity with garlic, onion, lemon, and fresh herbs.
Place the turkey on a rack in a roasting pan, breast side up.
Tie the legs together with kitchen twine and tuck the wing tips under the body.
Add chopped carrots, celery, and onion around the turkey in the pan.
Pour chicken broth into the bottom of the pan to keep the turkey moist.
Roast the turkey for approximately 13-15 minutes per pound, basting every hour with the pan juices.
Insert a meat thermometer into the thickest part of the thigh; it should read 165°F (74°C).
If the skin browns too quickly, tent the turkey loosely with foil.
Once done, remove the turkey from the oven and let it rest for 20-30 minutes before carving.
Garnish with fresh parsley before serving.
