Heat vegetable oil in a pot that was previously used to fry turkey.
Add diced onions to the hot oil and stir-fry for 2-3 minutes.
Add curry powder and dry thyme to the onions and fry for an additional 2-3 minutes.
Incorporate tomato paste into the oil and cook for 15 minutes on medium-low heat, stirring occasionally.
Add the blended pepper mix to the cooked tomato paste and fry for 10 minutes.
Stir in the drained tomato sauce and mix well, then cover and cook on low-medium heat for 50-60 minutes, stirring frequently to prevent burning.
After 50 minutes, add seasoning powder, curry powder, and dry thyme, and stir.
Cover and cook for another 10 minutes before turning off the heat and scooping out excess oil.
