8 chicken leg quarters (cut the thigh from the drumstick)
12 habanero (scotch bonnet peppers)
4 green onions
2 1/2 tbsp rosemary
2 1/2 tbsp thyme
1 tbsp nutmeg
2 1/2 tbsp ground ginger
1 tbsp ground cloves
2 1/2 tbsp Jamaican allspice
1 tbsp cinnamon
8 bay leaves
2 limes (removing all pulp)
1 1/2 red onion
10 garlic cloves
1 cup brown sugar
3 tbsp kosher salt
1/4 cup canola oil
3/4 cup soy sauce
1/4 cup vinegar (whatever kind you want)
1/4 cup rice cooking wine (optional)

Blend until smooth to create the jerk marinade.
