Tuscan Italian Chicken Stew

1 teaspoon salt
1/3 teaspoon sugar

Wash the potatoes well and cut them into wedges with the skin on. Cut the onion into 2mm slices. Crush the garlic, remove the sprouts, and break it apart.

Cut the chicken breast into bite-sized pieces and knead 2g of salt and 1g of sugar into it well. After 10 minutes, sprinkle with flour and spread it evenly.

Heat a frying pan over low heat and add 1 tablespoon of olive oil, rosemary, and garlic to bring out the aroma. Once the garlic is warm, remove it along with the rosemary.

Add the chicken breast from step 2 and cook it over medium heat until browned all over. Once well cooked, take it out.

Add a little more olive oil, then add onions and potatoes, and sprinkle 1g of salt. Mix briefly, cover, and steam over low heat for 6 minutes, stirring occasionally to prevent burning.

Return the chicken breast to the pan, pour in the white wine, and add the tomato juice after the liquid has mostly evaporated.

Simmer on low heat for 10 minutes, and when the liquid has reduced to about 2/3, taste and adjust seasoning with salt.
