Trinidad Paime, a beloved dish in Trinidad and Tobago, is often prepared during festive occasions and family gatherings. This sweet treat showcases the island's rich agricultural heritage, particularly its abundant bananas and coconuts. Traditionally, it symbolizes togetherness and celebration, making it a staple at parties and holidays. Today, variations of Paime can be found across the Caribbean, each with unique twists, reflecting local ingredients and tastes.

Wash the banana leaves thoroughly and dry. Brush the oil on the banana leaves on both sides and scold over a light flame on the stove until pliable.
Cut the banana leaves into 10 inch squares.
Combine all ingredients in a large bowl.
Weigh 5 ounces of the mixture and spoon on the banana leaf.
Spread to a rectangle 2" x 4" and fold in leaf on all four sides.
Cross tie with a food string.
In a deep stock pot, add water and bring to a boil. Cook in boiling water for approximately 25-30 minutes.
Test if cooked. If not, continue cooking to the desired consistency. Once cooked, remove the cooked paime and drain the water.
Sever string. It can be served warm or cold.
