Combine 1 cup of oat flour, 1 teaspoon of baking powder, 0.5 teaspoon of baking soda, 0.5 teaspoon of salt, and 0.5 teaspoon of cinnamon in a bowl.
If you don't have oat flour, grind 1 cup of quick oats in a blender until fine.
In a larger bowl, mix together 0.5 cup of room temperature butter and 0.75 cup of light brown sugar on medium speed until blended.
Add 1 egg to the butter and sugar mixture and mix well.
Pour in 0.25 cup of honey and 0.25 cup of unsweetened applesauce, then add 0.5 teaspoon of vanilla extract and mix until combined.
Add the dry flour mixture to the wet ingredients and mix until well combined.
Stir in 2 cups of whole oats and any mix-ins like chocolate chips or flaxseed until everything is wet and combined.
Preheat the oven to 350 degrees Fahrenheit.
Line an 8x8 glass baking dish with parchment paper for easy removal.
Scoop the mixture into the prepared baking dish and flatten it out evenly.
Bake in the preheated oven for about 25 minutes until golden brown on the edges.
Remove from the oven and let cool for about 30 minutes before refrigerating.
Once completely cool, cut into bars as desired.
