In a dish, put water, oil, Worcestershire sauce, black pepper, smoked paprika, garlic powder, salt, chicken stock powder, onion powder, spring onion, thyme, mustard, zest of 1 whole lemon, and cloves. Mix the marinade well.

Pat dry the washed pork shanks with a paper towel, coat the shanks with the marinade, and put on a foil paper. With a knife, make an incision on one side of the shank, insert 1 clove, and then turn it on the other side and repeat the same process. Pour 2 tbsp of the marinade over the shank, cover it nicely with the foil paper, and put on an oven tray. Repeat the same process with the other shank, saving 2 tbsp of marinade for later.

Put the shanks in a preheated oven and cook for 2 hours at 200 °C. Remove them from the oven, carefully unwrap the top part of the shanks, pour 1 tbsp of marinade over each shank, switch the oven to broil, and grill the shanks with the top part still uncovered for 30 minutes or until they turn brown.

Remove from the oven and then remove from the foil. Put the gravy in a pan, add flour, and mix with a silicon brush thoroughly. Cook to thicken the gravy for 1 minute on low. Serve with green beans and creamy mushrooms or any side of your choice.
