Greek yogurt reduces calories while maintaining creaminess
Start by preparing the ingredients: 1 tablespoon of oregano, 2 teaspoons of cumin, 3 black pepper cloves, 3 garlic cloves, 1/2 white onion, and 2 red tomatoes.
Prepare the dried chiles by removing the stems and seeds; use 4 pasilla chiles and 10 chilies.
Boil the dried chiles in water for about 5-8 minutes until softened.
Prepare the nopales by rinsing them in warm water for about 5 minutes to reduce sliminess, then boil them in water for about 5 minutes until they change color to a darker green and become soft.
Cut the pork ribs into smaller pieces, about 1 pound, and trim excess fat as needed.
In a pot, bring water to a boil and add the nopales; cover and cook for about 5 minutes until soft.
In a separate pot, add the pork ribs and cook until tender, approximately 20-25 minutes, adding 1/2 onion and 3 bay leaves for flavor, along with salt and black pepper.
Once the chiles are softened, transfer them to a blender with some of the cooking liquid, adding the spices (oregano, cumin, garlic) and blend until smooth.
Strain the blended sauce to remove any solids.
In a frying pan, heat vegetable oil and add the cooked pork ribs to brown them until crispy, about 35-40 minutes.
Add the cooked nopales to the frying pan with the ribs and cook together for a few more minutes.
Add the strained red sauce to the frying pan, along with a little water to rinse out the blender, and simmer for about 5 minutes, adjusting salt to taste.
