Belgium Fries with Andalouse Sauce

Select a large piece of potatoes.
Cut potatoes into strips of almost one centimeter.
Wash potatoes under running water very well.
Drain the starchy water from the potatoes.
Soak potatoes in water for about an hour or so.
Drain the soaked potatoes and place them in a pan of water.
Lightly boil the potatoes, ensuring the water does not fully boil.
Once the water starts forming little bubbles, drain the potatoes.
Place the drained potatoes on a clean kitchen towel to let them dry completely.
Add butter and olive oil into the hot oil to keep the temperature down.
Carefully place the potatoes into the hot oil and fry for about 10 minutes.
After 10 minutes, take out the potatoes and lay them on clean paper towels to drain.
Let the potatoes rest for half an hour until they cool down.
Refry the cooled potatoes for only 4 to 5 minutes to make them crispy.
Take out the fries and serve on a platter with Andalouse sauce.
