Lavar la quinoa hasta que el agua salga clara para eliminar las saponinas.
Escurrir la quinoa para quitar el exceso de agua.
Colocar un cazo en el fuego y añadir 1 taza de quinoa y 3 tazas de agua.
Dejar hervir y luego cocer durante aproximadamente 10 minutos.
Colar la quinoa para quitar el exceso de agua y pasarla a un bol.
Añadir sal al gusto, 1 cucharadita de ajo granulado, 1 cucharadita de cebolla en polvo, 1/2 cucharadita de perejil seco, y pimienta negra molida al gusto.
Opcionalmente, añadir un pellizco de comino molido.
Batir ligeramente un huevo y añadirlo al bol con la quinoa.
Mezclar bien todos los ingredientes.
Añadir 2 cucharadas de avena integral (o harina de trigo, harina integral, harina de arroz, o maicena) y mezclar bien.
Dejar reposar la mezcla durante 30 minutos a 1 hora.
Formar las galletitas utilizando un cortapastas sobre una bandeja apta para horno con papel de horno.
Hornear a 200°C (aproximadamente 392°F) durante 20 a 25 minutos, controlando el tiempo.
Dejar enfriar las galletitas sobre una rejilla para evitar que se humedezcan.
