Cook rice in a pot of boiling water until fluffy, about 15-20 minutes.
Prepare lentils by rinsing and boiling in water until tender, approximately 20-25 minutes.
Sauté mixed vegetables in a pan with oil until soft, about 5-7 minutes.
Make meat curry by browning meat in a pot, then adding spices and simmering until cooked through, about 30 minutes.
Prepare pickles by mixing chopped vegetables with spices and letting them marinate for at least 15 minutes.
Serve rice on a large plate as the base of the thali.
Add a portion of lentils next to the rice.
Spoon vegetable curry and meat curry onto the plate.
Add a dollop of yogurt on the side of the plate.
Include a serving of pickles and salad for freshness.
Garnish the thali with fresh herbs if desired.
