Apple cider vinegar adds a fruity note while still providing acidity.

Slice the potatoes thinly using a mandoline.
Soak the sliced potatoes in a bowl with water, salt, and vinegar for 1-2 minutes.
Remove the potatoes from the soaking mixture and dry them using a paper towel or kitchen towel.
Arrange the potatoes on a towel and cover with another towel, then press to dry them.
Alternatively, place the potatoes on a kitchen towel, fold the towel over, and wipe to remove excess water.
Check the oil for readiness by observing the bubbles.
Carefully add the potato slices one by one to the hot oil, ensuring they do not overlap.
Turn the potato slices while frying to ensure even cooking.
After about 1 minute, check if the crisps are ready and remove them from the oil.
