Mexican Pork Stew

2 lbs pork shoulder, cut into 1-inch cubes
2 tbsp olive oil
1 large onion, chopped
4 cloves garlic, minced
2 medium carrots, diced
2 medium potatoes, diced
1 bell pepper, chopped
1 can (14 oz) diced tomatoes
2 cups chicken broth
1 tbsp ground cumin
1 tbsp chili powder
1 tsp oregano
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper (optional)
1/4 cup fresh cilantro, chopped (for garnish)

Heat olive oil in a large pot over medium heat.

Add the pork cubes and brown on all sides, about 5-7 minutes.

Remove the pork from the pot and set aside.

In the same pot, add the chopped onion and garlic; sauté until softened, about 3-4 minutes.

Add the carrots, potatoes, and bell pepper; cook for another 5 minutes.

Stir in the diced tomatoes, chicken broth, cumin, chili powder, oregano, salt, black pepper, and cayenne pepper if using.

Return the browned pork to the pot and bring to a boil.

Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the pork is tender.
