1

Remove seeds from the dried fig fruit using a metal spoon and hands.

Prepare a medium-sized mesh bag or cheesecloth and place only the seeds inside, sealing the top.

4

Rub the bag of seeds with clean hands to release a slimy substance for about 5-10 minutes until the water turns light yellow.

5

Let the bowl sit for about 30 minutes to set the jelly.

6

In a separate pot, bring 2 cups of water to a boil and add 1/2 cup of coconut sugar, stirring until dissolved.

7

Set the sweetened water aside to cool and prepare the juice of 2 fresh limes.

8

Combine the lime juice with the cooled sugar mixture.

9

Check the jelly after 30 minutes, and if set, cut it into larger bite-sized pieces with a knife.

10

Pour in some of the cold lime syrup and add a handful of ice cubes and lime slices for presentation.
