Today, these noodles are embraced in various forms across the globe, with many cultures adding their unique twists to the basic recipe.

Baking soda can be used with an acid.
Start by measuring 5 cups of freshly milled kamut flour into a large bowl.
Add 2 and 1/4 teaspoons of Himmlin pink salt to the flour and break up any lumps.
Pour in 2 cups of water and mix until combined, adjusting with a splash of water if the dough is too dry.
Knead the dough until it is fairly stiff and smooth, then cover it with plastic wrap to prevent drying out.
Let the dough rest for at least 20 minutes to allow the flour to absorb moisture and relax.
After resting, sprinkle flour on the counter to prevent sticking and roll out the dough to desired thickness.
Cut the rolled-out dough into noodle shapes, ensuring they are somewhat uniform for even cooking.
Bring about 2 quarts of water to a boil, adding 2-3 teaspoons of salt and 1 teaspoon of oil to the water.
Once boiling, add the noodles to the pot, ensuring they do not stick together.
Cook the noodles for about 12 to 15 minutes, checking for doneness by breaking one in half to see if it's cooked through.
