Homemade Noodles With Cottage Cheese

Combine all-purpose flour and salt in a large bowl.

Make a well in the center and crack in the eggs.

Mix the eggs into the flour using a fork until combined.

Knead the dough on a floured surface until smooth, about 8-10 minutes.

Wrap the dough in plastic wrap and let it rest for 30 minutes.

Roll out the dough into thin sheets using a pasta machine or rolling pin.

Cut the sheets into desired noodle shapes.

Bring a large pot of salted water to a boil.

Cook the noodles in boiling water until al dente, about 2-4 minutes.

Drain the noodles and return them to the pot.

Add cottage cheese, parmesan cheese, and olive oil to the noodles.

Toss gently to combine and heat through over low heat.

Season with black pepper and fresh herbs before serving.
